Super Simple Cauliflower Mac and Cheese Recipe
If cauliflower can be pizza, then why not mac and cheese?! For those avoiding processed carbs or gluten, cauliflower is a handy and delicious ingredient. It reminds us of tofu in the way it takes on the flavor of other ingredients when it is cooked.
There are many recipes out there for cauliflower macaroni and cheese, but we love this one because it is so simple and tastes just as good as the real thing.
INGREDIENTS
1 Head of cauliflower
½ cup of sour cream (substitute Greek yogurt)
1 cup of shredded cheddar cheese
Salt
Pepper
DIRECTIONS
Break the cauliflower up into pieces.
Boil the cauliflower for 5 minutes.
Drain the cauliflower.
Mix together the cauliflower, sour cream, and cheese while the cauliflower is still hot.
Add salt and pepper to taste.
